About the Recipe
1 Natural Pork Tenderloin
1 Organic Purple Sweet Potato, Diced
1 package of Organic Green Beans
1 package of Local Mushrooms, sliced
1 Handful of Cherry Tomatoes, cut in half
Preheat oven to 375 degrees.
On medium/high heat sauté your diced sweet potatoes in EVOO & a little Sea Salt until tender.
Trim and remove any fat and silver skin from tenderloin.
Season with EVOO & Greek Seasoning then place on sheet tray.
Add vegetables to sheet tray and drizzle with EVOO & Sea Salt. Bake for 20-25 minutes, or until the internal temperature of the meat reaches 135° - 140°.
Slice thinly, and serve over arugula, and garnish with lemon juice and more Organic EVOO.
